About honey…

Honey is one of nature’s most remarkable foods—crafted by bees from the nectar of flowers and enjoyed by humans for thousands of years. Its flavour, colour, and texture vary depending on the flowers visited by the bees, making every jar unique.


### How Honey Is Made

Honey begins with hardworking honeybees collecting nectar from flowering plants. Using their long, tube-like tongues, bees extract nectar and store it in a special “honey stomach.” Once back at the hive, the nectar is passed from bee to bee, gradually breaking down complex sugars into simpler ones through natural enzymes.

The bees then deposit the nectar into honeycomb cells. To reduce moisture and prevent fermentation, bees fan their wings to circulate air, thickening the nectar into honey. Once it reaches the perfect consistency, the bees seal each cell with a thin layer of wax—preserving it for future use.


### The Extraction Process

Beekeepers carefully harvest honey while ensuring the health of the hive. The process typically involves:

- Removing the frames: Honey-filled frames are taken from the hive.
- Uncapping: The thin wax layer sealing each cell is gently removed.
- Spinning: Frames are placed in an extractor, which spins them to release honey using centrifugal force.
- Straining: The honey is filtered to remove wax particles and debris.
- Bottling: The finished honey is poured into jars, ready to enjoy.

This process preserves the natural qualities of honey without altering its flavour or nutritional value.


### Why Honey Crystallises

Crystallisation is a completely natural process and a sign of high-quality, raw honey. It occurs because honey is a supersaturated solution of sugars—mainly glucose and fructose. Over time, the glucose can separate from the water and form tiny crystals.

Factors that influence crystallisation include:

- The ratio of glucose to fructose  
- Storage temperature (cooler temperatures encourage crystallisation)  
- Presence of natural particles like pollen  

Some honeys crystallise quickly, while others remain liquid for longer depending on their floral source.


### How to Re-Liquefy Crystallised Honey

If your honey has crystallised, it can easily be returned to a smooth, runny state:

1. Place the jar in a bowl of warm water (not boiling).  
2. Stir gently as the crystals begin to dissolve.  
3. Replace the water as needed until the honey is fully liquid again.  

Avoid using high heat or microwaving, as this can damage the honey’s natural enzymes and flavour.
